Fresh Basil Vegetables

medium eggplant, cut into cubes

large cloves garlic, minced

fresh basil, coarsely chopped

italian salad dressing
1/4 cup
50 ml
fresh italian parsley, chopped
1/4 cup
50 ml
lemon juice
1/4 cup
1 ml
pepper
1/4 tsp
Spray shallow casserole with nonstick cooking spray. In prepared pan,
combine eggplant, zucchini, onions and garlic. Coat vegetables with more
cooking spray.
Cover and bake in preheated 350 F (180 C) oven for 35 to 40 minutes or until
vegetables are tender. Turn occasionally. Remove from oven; cool slightly.
Add basil, dressing, parsley, lemon juice and pepper. Toss until well
coated. Cover and let stand at least 2 hours to blend flavours.
